Cheesecake is one of the most popular desserts in the food and restaurant market. New York style cheesecake is delicious but it’s also packed with lots of calories. Cutting back the calories in order to get back in shape requires self-discipline.
Here are a few rules to remember: don’t deprive the body of its cravings, consume high calorie foods in moderation, and try to use healthier ingredients which will help reduce the calorie intake when creating desserts at home.
Tiffani Maynor’s low calorie cheesecake is made with Greek yogurt, sweetened with raw honey, blueberries, apricots, raspberries, and dried cranberries. At only 130 calories with less than eight grams of fat per serving, the natural flavors are guaranteed to satisfy any sweet tooth.
1 1/2 cups of plain ‘Oikos’ organic Greek yogurt
1/4 cup of freshly squeezed orange juice
1/4 cup of freshly squeezed lime juice
1/2 cup of honey
1 teaspoon of Truvia sweetener
1 teaspoon of cinnamon
3/4 cup of granola
12 to 14 low fat Graham cracker sheets
1/2 cup of chopped roasted almonds
1/2 cup of dried cranberries
1/2 cup of ripe blueberries
1/2 cup diced ripe apricots
1/2 cup of ripe raspberries
9 inch square baking or cake pan
Rinse blueberries, apricots, and raspberries and place them into a mixing bowl. Pour freshly squeezed orange and lime juice over the fruit and stir.
Line a separate mixing bowl with a sheet of cheese cloth. Pour all of the wet fruit contents into the bowl to drain for 25 minutes. Note: The cheese cloth will trap all of the juices and water from the fruit without interrupting the marinating process.
Use a spoon to scoop out the fruit into another bowl. Mash all of the fruit with a potato masher; add sweetener, dried cranberries, and stir.
In a separate bowl, mix Greek yogurt and granola together, and set aside to settle for 10 minutes.
Line a few graham cracker sheets on the bottom of a square cake pan. Pour in half of the yogurt contents and spread evenly. Top the first layer with cinnamon, drizzle honey, and add half of the fruit topping to the first layer.
Line the rest of the graham cracker sheets on top of the first layer and repeat. Garnish the top layer with chopped roasted almonds, place dessert into a freezer for 15 to 20 minutes, and serve.
