For a slam dunk start to game day or Election Day when blue and red teams like the Kentucky Wildcats and Louisville Cardinals meet for an epic battle, pair their team colors. This menu also works amazingly well for an election night party or when hosting a group to watch a political debate. An easy, make-ahead crowd favorite is chili, which can be served with blue corn chips. Make your own pizza dough and top it with red sauce and your favorite red toppings (red pepper, fire roasted peppers, minced pimento, sundried tomatoes, sliced fresh tomatoes, red pepper cheese, etc.) for an all-red theme or go blue with blue cheese, BBQ chicken or duck breast, and caramelized onions. Wash it down with Blue Moon Belgian White or Killian’s Irish Red. For a no-alcohol drink, punch in either color is easy (make Perfect Party Punch and add 1 pint of cranberry juice for red or 1 pint of blueberry juice for blue, float sliced strawberries or blueberries on top).
For dessert, make or buy a pre-made cheesecake and top with blueberry or cherry pie filling. These toppings can both go on one cheesecake if you gently place a divider in the middle (have someone hold a chef’s knife, blade down, or a thin plastic cutting board, while you spoon on both toppings, each over half the cake and then remove the divider carefully). It’s best to keep the colors separated (and perhaps the guests, too), so use caution. Fruit toppings work well with cheesecakes that have a rim or lip to hold the fruit on the top and keep it from dripping down the sides. If yours doesn’t have an indentation, press gently to make one all around the top edge. The top will be covered by fruit, so your fingerprints or spoon marks won’t show, but avoid pressing into the sides because they any marks here will be visible. A tip for making precise cheesecake slices is to remember to wipe the knife or cake server between slices.
