Chef Joan Tanya is the Spanish Chef and Restaurant Manager for Tapas Y Vino at the Grand Millennium Sukhumvit. Chef Joan grew up in a family that loved cooking and he says he was most influenced by his grandmother from whom he learned to cook and appreciate the intricasies of Spanish cuisine from the time he was a young boy. At 17, Chef Joan joined Escola de Cocina Bell Art cooking school, which is one of the oldest professional cooking schools in Barcelona. He continued his training in Mediterranean cuisine at Escola Hofmann. After graduation, he started his culinary apprenticeship at several Michelin-starred restaurants including Gordon Ramsey in London and Moo in Barcelona.
Chef Joan continued his career as Chef de Partie at El Caliu restaurant in Spain in 2000 and then he worked as Head Chef at the Michelin-starred El Dorado Petit, which is a Catalan and Mediterranean restaurant offering modern tapas and fresh fish in Costa Brava, Spain. In 2008, he joined 3-star Michelin restaurant Can Fabes serving Catalan cuisine with fresh and seasonal products in Barcelona as Chef de Partie. Chef Joan then decided to pursue international work in London. He first worked at La Dehesa, one of the busiest restaurants in the heart of London offering Spanish and Italian charcuterie and tapas-style cuisine; and then went on to work at Gordon Ramsey and Moo. Prior to joining Grand Millennium Sukhumvit, Chef Joan was also Executive Head Chef at a charcuterie and international tapas restaurant in the Cayman Islands. Chef Joan brings a wealth of experience and professionalism and has an upbeat personality and approachable friendliness that brings an exciting and fresh new energy to Tapas Y Vino. Chef Joan is easy to talk to and very knowledgeable about cuisine. His love of food is apparent in every dish that he serves and he is happy to explain any of the exciting new dishes on his new menu.
The Food & Wine
Tapas Y Vino has an ala carte menu as well as a “Tapas & Free Flow Wine Promotion” that is available daily between the hours of 1800-2230. Priced at $30.82USD (950Baht) net for unlimited selected tapas and free flow wine or $25.95USD (800Baht) net for food only.

The set tapas menu for the promotion changes weekly; but always includes paella and up to 10 selected tapas and a dessert. Look for traditional favorites on this menu like Gazpacho, Garlic Prawns and Patatas Bravas.
While the set menu is not to be missed, ordering off the ala carte menu is where the real adventure begins. Chef Joan has almost re-invented the menu and is offering one highly accomplished dish after another. He has painstakingly sourced authentic ingredients from around the globe and has some fabulous tapas that you won’t find anywhere else. All great tapas meals should begin with the Assorted Spanish Cold Cuts, which is a meat and cheese plate. The version at Tapas Y Vino features the highly coveted imported Black Foot Ham, which is often hailed as one of the finest quality cured hams in the world.
Another one of a kind offering is the Marcona Almonds. These are an exquisite type of imported almonds that are lightly salted, but have a truly unique and memorable flavor. They are thoroughly addictive and superior in every way to any other almond ever tasted. For something light, you may want to try the Tempura de Vegetables Con Salsa Romesco. It’s crispy fried mix vegetables in a bright and creamy romesco sauce and is most excellent when paired with the crisp white house wine.
For those who love octopus, don’t miss the Pulpo a La Gallega, which is delicate and perfectly seasoned with paprika and olive oil. The Barcelona Bomb is another interesting dish; as it is a recipe that comes from Chef Joan’s childhood. It’s a light and crispy deep fried potato fritter with a flavorsome pork filling on the inside.
The real star of the new menu is the Filete de Ternera a La Sal. It is truly a masterpiece that you have to order. It is a beef filet mignon cooked in a salt crust to moist and tender perfection. This cooking technique is traditionally done with fish, but when applied to beef it intensifies the flavor of the meat, yet gives it an amazing amount of juiciness. The portion is large enough for two people to share and you have to pre-order this dish at least 20 minutes in advance. It is well worth the wait, and there is no other place in Bangkok where you can have beef cooked in this wonderfully scrumptious way. When enjoyed with a glass or two of the house red wine, it becomes a memorable dish that you won’t soon forget.
