Spring cookbook: Asparagus

The harvest season in Vermont for asparagus is May and June where it will be available from your local farmers markets and farm stands.

For the early spring holidays, Shaw’s, Hannaford and Price Chopper all carry this vegetable to enjoy the below recipes.

Asparagus onion Mozzarella Soppressata pizza

Hannaford inspired this pizza; all the ingredients were bought there as well.

The asparagus looked great, the whole wheat pizza dough and the Mozzarella Soppressata were both in the deli case.

Put olive on the baking pan and scatter with a little cornmeal. Top with canned diced tomatoes and sprinkle with basil, oregano, black pepper, garlic powder and red pepper flakes , if desired.

Top with Hannaford mozzarella slices down the center and sliced Mozzarella Soppressata (hand rolled mozzarella, prosciutto and Italian spices) on the sides of the pizza.

Toss lightly sautéed onions and shredded asiago cheese on the pizza. Drizzle a small amount of olive oil over the pizza and top with desired herbs or spices.

Bake on the lowest rack in the oven for about 15 – 20 minutes at 450’F. Follow the directions on pizza dough package.

Soba noodles with asparagus, brie and toasted almonds

Look for this recipe card “Penne with Brie & Toasted Walnuts with Belletoile Triple Crème Brie “at Hannaford over the brie cheese case.

This examiner substituted the pasta and nuts according to what was in my pantry and used the microwave to make the sauce.

This was my first attempt with brie in a sauce. It was amazingly good.

This nextooze.combined the best of both recipes using the microwave and these variations.

Add 2/3 cup white grape juice, 1 cup of each shredded Swiss cheese and Gruyere, a few drops to ¼ teaspoon mustard, a 3-ounce package cream cheese, and1-2 tablespoons diced onion, shallot or chive in a 1 quart microwaveable bowl.

It will be helpful to bring all cheese, including cream cheese to room temperature.

If the cream cheese is not at room temperature, it may not melt completely, but the taste will be fine.

Microwave on high power for up to 5 minutes. Stir every minute until cheese is melted and bubbly.

Enjoy with asparagus or, bread cubes, and/or your favorite fruit and veggies.
